Tasting notes

Visually, it gleams pale gold with green highlights, signalling its freshness. The nose unfolds with intense aromas of orange blossom, lemon zest, and delicate white flowers. On the palate, a lively attack delivers flavours of stone fruit, nectarine, white peach, with a soft kiss of honey. Creamy yet lifted by crisp acidity, the wine finishes long, fresh, and gently mineral.

Hailing from the clay–limestone soils beside the Thau Lagoon, this Hallmark Pays d’Hérault white combines 75% Chardonnay, 15% Grenache Blanc, and 10% Sauvignon Blanc from clearly cooler, coastal vineyards. The fruit sees partial ageing, about five months, in oak barrels, which adds a touch of texture and richness without softness. The wine’s name, “Combe Calcaire” (“calcareous valley”), speaks to the terroir’s mineral-driven character.

Serve chilled (10–12 °C) and pair with classic southern French fare: white meats, creamy fish dishes, shellfish, or fresh goat’s cheese to echo its floral and honeyed layers.

Appellation IGP Pays d'Hérault.

In 1971, Véronique and Aimé Guibert bought a “Mas” (farmhouse) and abandoned mill in the heart of a beautiful, wild valley through which flowed the Gassac river. After consulting Prof. Henri Enjalbert they planted vines in clearings in the middle of 4,000 hectares of forest - he was convinced they had the "terroir" to produce a Grand Cru of the future. The first vintage of their flagship red was produced in 1978 from roughly 80% Cabernet Sauvignon. By 1982, a respected French wine guide described Mas de Daumas Gassac as the “Château Lafite of the Languedoc”. The Rose Frizant was created in 1981, also from the younger Cabernet vines.

Today, the children of the Guibert family manage the estate, storing their harvests in an old cellar underneath the original mill. The five brothers have continued to fine tune the Mas de Daumas Gassac's Grand Vin and broaden the range with varietal wines and blends that offer great value for money under their Moulin de Gassac label.
