Only sparkling wine from the Champagne region in north-east France can carry the name. It’s made mainly from Chardonnay, Pinot Noir and Pinot Meunier, and gets its second fermentation in the bottle. Time on the lees is what gives Champagne its fine bubbles and its notes of brioche, toast and nuts. A Blanc de Blancs, made only from Chardonnay, leans towards citrus and chalk; a rosé or a Pinot-led blend brings more red fruit and body.

At the top end sit prestige cuvées like Laurent-Perrier Grand Siècle and Pommery Cuvée Louise. On the label, Brut Nature means no added sugar at all; Brut is still dry, just a touch rounder.
