Champagne Piollot is a small grower-producer in the Aube, the southern Côte des Bar region where Pinot Noir thrives on Kimmeridgian limestone soils. Cuvee Colas Robin is their top vintage cuvee, named after a family ancestor. Made with zero dosage (Brut Nature), this relies entirely on fruit quality and extended aging to achieve balance without added sugar. The 2014 vintage has developed beautifully with a decade of age. Brioche, ripe stone fruit and citrus with honeyed notes, chalky minerality and subtle oxidative complexity. Medium to full bodied with fine mousse and vibrant acidity. Bone-dry with tension and energy, showing the terroir character of Kimmeridgian soils. The fruit has evolved beyond primary freshness into more complex, developed territory. Long, mineral-driven finish. Serve cool (8-10°C). The purity and structure pair excellently with oysters, grilled turbot, Comte, or works as a contemplative aperitif.
