Cuvee Louise is Pommery`s top wine, named after Madame Pommery who transformed the house into a Champagne powerhouse in the 19th century. Made only in exceptional vintages from Grand Cru Chardonnay vineyards in Cramant and Avize, with minimal Pinot Noir. The 2005 vintage is considered one of the great Champagne years, perfect ripeness with remarkable acidity and aging potential. Nearly twenty years have brought extraordinary development. Toasted brioche, candied citrus and hazelnut with honey, truffle and oxidative complexity. Full bodied with elegant, refined mousse and still-vibrant acidity. The fruit has evolved completely into tertiary glory: this is mature Champagne showing biscuit, caramel and mineral depth. There`s power balanced by finesse, showing why 2005 is legendary. Incredibly long, evolved finish. Serve cool (10-12°C), warmer than young Champagne, to showcase the complexity. This deserves momentous occasions: pair with Oscietra caviar, turbot with champagne sauce, roasted langoustines, or seared scallops with white truffles. Housed in a breath-taking art nouveau villa in Reims with sprawling chalk cellars, Champagne Pommery have always taken a unique and individualistic approach to the world's foremost sparkling wine. When Madame Pommery took the helm in 1865, she commissioned the building of what was possibly France's greatest architectural project since Versailles. An anglophile at heart, Madame Pommery also set out to create a Champagne in tune with drier styles preferred by the English, who were, and remain, some of the world's most prolific consumers of Champagne. In doing this, she is credited with pioneering the Brut style of Champagne that is now the most popular style on the market. A few years ago, Pommery demonstrated that they are still true firebrands and pioneers, purchasing vineyard land in Hampshire, England and launching Louis Pommery England Brut, the first commercial English Sparkling Wine to be made by a Champagne house.
