Spier was established in 1692 on the banks of the Eerste River, and its cellar is the oldest dated one still in use in South Africa. What makes it interesting now isn't the age, though, it's what the Enthoven family have done with it since taking over in 1993. The 650-hectare property has been turned back into a proper working farm: regenerative viticulture, pasture-raised livestock, food gardens, and large tracts of indigenous renosterveld and fynbos restored to how they were. Soil health first, wine second, and the wine is better for it.

The Seaward wines come from vineyards close to the Atlantic, where cooler air keeps the acidity taut and the fruit precise.

Creative Block and 21 Gables are where the estate stretches,  serious Stellenbosch reds and Chenin with real depth.
