This wine greets the eye with a bright straw yellow colour edged with green, showing off its youth. On the nose there are aromas of pineapple, citrus, white apple, and a touch of fennel and herbs. In the mouth it’s dry and well balanced, with freshness and acidity that say Rueda clearly. Aging on fine lees adds body and texture. The finish lingers nicely, with the classic slight bitter twist typical of the variety.
Made from 100% Verdejo grapes, from vines planted more than 15 years ago on dry land with gravelly soils in Rueda. The harvest includes mechanical work, with night harvesting to preserve freshness. Grapes see a cold maceration of 4-5 hours, followed by fermentation and around three months aging on fine lees. This approach gives freshness, aromatic complexity, and a clean texture.
Serve chilled (6-8 °C). This wine pairs beautifully with white fish, tuna, sushi, seafood rice, paellas, or pasta. Its crisp acidity and herbal notes make it an excellent match for shellfish or lighter dishes with a bit of citrus or fresh herbs.
Protos Verdejo 2023 gives you a bright, approachable example of Verdejo at its best: aromatic, clean, and refreshing, yet with enough texture and depth to feel satisfying. It’s perfect for those wanting a versatile white that matches food easily, yet offers more character than just “nice and easy.” It offers excellent value for its clarity and drinkability, especially for summer or casual dining.
