Daniel-Etienne Defaix is one of Chablis' most respected growers, farming organically across prime sites in the appellation. This Vieilles Vignes cuvée comes from vines averaging 35-50 years old, which bring extra concentration and depth while keeping Chablis' signature freshness. The 2022 vintage in Chablis was excellent: ripe fruit with bright acidity and classic mineral tension.
Green apple, lemon zest and white flowers with that distinctive Chablis chalk and flint character, almost saline on the finish. Bone-dry with racy acidity and medium body. There's more weight and texture here than basic Chablis thanks to the old vines, but it's still precise and linear rather than rich. Unoaked, as proper Chablis should be.
Serve well chilled (8-10°C). The classic pairing is oysters, but this works brilliantly with any shellfish, grilled fish, goat's cheese, or as a crisp aperitif. Drinking beautifully now, will hold 3-5 years.
