Espíritu de Chile (Spirit of Chile) sources fruit from the Maipo Valley, Chile's historic heartland for Cabernet Sauvignon where the variety thrives on alluvial soils with Andes snowmelt irrigation. Explorador (Explorer) represents their quality-focused range. The 2019 vintage has spent time in bottle, allowing the wine to move beyond primary fruit into more integrated territory.
Blackcurrant, plum and black cherry with cedar, tobacco and earthy notes. Medium to full bodied with soft tannins and moderate acidity. The fruit has evolved from youthful ripeness into something more savoury with leather and dried herb character emerging. There's typical Chilean warmth balanced by structure. Approachable and drinking well now.
Serve at room temperature (16-18°C). Brief decanting helps it open up. Pairs well with grilled steaks, empanadas, roast chicken, or hard cheeses. Drinking at its best now, enjoy over the next year or two.
