Domaine du Chalet Pouilly, Saint-Véran 2020
This delicious Saint-Véran is exclusive to Slurp in the UK. Perfect with Moules Marinières and oysters.
This Saint-Véran has a light yellow appearance in the glass with greenish tints. The aroma is elegant with crisp apple, grapefuit and floral/blossom notes. The palate has ripe apple and nectarine fruit with slight notes of butter and freshly baked bread. This is a classic example which has wonderful baance and poise, and a long and fresh finish. Enjoy now, or can be cellared for 5 to 10 years. The winemakers recommend matching especially with Moules Marinières (see below), oysters or Gougères (a baked savory pastry made of choux dough mixed with cheese).
Food Pairing Suggestion - Moules Marinières
1 kg Mussels, 2 shallots finely chopped, 1 clove of garlic finely chopped, 2 sprifs of thyme, 1 bay leaf, 200ml dry white wine, 30g butter, 3 sprigs of parsley finely chopped.
1. Scrub mussels under cold running water removing any barnacles or dirt.
2. Put the garlic, shallots, thyme leaves, bay leaf and wine into a large pan, and bring to a simmer. Turn the heat down, and cook gently for 10 minutes, then turn up the heat to medium-high.
3. Drain the mussels and tip into the pan. Cover and cook until most of them have opened: about 3 minutes.
4. Add the butter and put the lid back on for 30 seconds to allow it to melt. Add the parsley and shake the pan well to distribute, then season gently and serve immediately, discarding any mussels which remain closed.
