Food Pairing Suggestion - Moules Marinières
Ingredients
1 kg Mussels, 2 shallots finely chopped, 1 clove of garlic finely chopped, 2 sprifs of thyme, 1 bay leaf, 200ml dry white wine, 30g butter, 3 sprigs of parsley finely chopped.
Method
1. Scrub mussels under cold running water removing any barnacles or dirt.
2. Put the garlic, shallots, thyme leaves, bay leaf and wine into a large pan, and bring to a simmer. Turn the heat down, and cook gently for 10 minutes, then turn up the heat to medium-high.
3. Drain the mussels and tip into the pan. Cover and cook until most of them have opened: about 3 minutes.
4. Add the butter and put the lid back on for 30 seconds to allow it to melt. Add the parsley and shake the pan well to distribute, then season gently and serve immediately, discarding any mussels which remain closed.

Domaine du Chalet Pouilly is located in the small and beautiful village of Solutre-Pouilly, on a sun-soaked hillside overlooking the small hamlet of Pouilly, in the heart of the "Pouilly-Fuissé" appellation. The Plumet family have produced wine here for more than a century, having planted the original vines in 1850, and were awarded first prize at the Mâcon wine competition for their Burgundy wine in 1928 - well before the Pouilly-Fuissé and Saint-Véran appellations had even been created! The viticultural and winemaking expertise gained over time has been passed down from generation to generation.
