Tasting Notes

On the hillsides of St Aubin de Luigné, Poil de Lièvre was originally the name of a plot of land on the cadastral map. Deep red and fragrant with red fruits, sometimes mingling with aromas of ripe fruit and spices, Poil de Lièvre perfectly complements your everyday cooking.

Soil: Composed of schist, purple sandstone, and quartz.

Winemaking: Hand-harvested, fully ripe grapes are separated from their stems and macerated for 15 days. The free-run juice is used, and the press juice, obtained gently by pneumatic pressing after maceration, is then fermented and aged in temperature-controlled tanks.
