Raúl Pérez is considered one of Spain`s greatest winemakers, producing some of the country`s most sought-after wines across multiple regions. Ultreia Saint Jacques comes from old-vine Mencía in Bierzo, northwest Spain, where slate soils and Atlantic influence create wines of remarkable elegance. The Saint Jacques vineyard sits on steep slopes at altitude, producing concentrated fruit with freshness. The 2021 vintage has had time to integrate and show complexity. Red cherry, raspberry and wild strawberry with violet, mineral slate and subtle spice. Medium bodied with silky tannins and vibrant acidity. There`s purity and precision here, showing restraint rather than power. Layers of complexity with floral, earthy and mineral notes. This is closer to Burgundian elegance than typical Spanish reds. Long, fine finish. Serve slightly cool (14-16°C). Decant for 30 minutes to let it breathe. Pairs beautifully with duck, game birds, wild mushrooms, or aged cheeses. Drinking well now but built to age gracefully over 8-10 years.
