Garage Wine Co. is a pioneering project focused on rescuing Chile`s forgotten old-vine vineyards, particularly PaÃs, the grape Spanish missionaries planted in the 16th century. These vines can be over 200 years old, dry-farmed and ungrafted, surviving on marginal sites that escaped commercial replanting. Revival comes from old bush vines in the Maule Valley. The result is light, aromatic red wine nothing like Chile`s international varieties. Red cherry, cranberry and wild strawberry with herbs, flowers and earthy notes. Light to medium bodied with soft tannins and bright acidity. This feels closer to Beaujolais or Loire reds than typical Chilean wine. Fresh, crunchy fruit with perfume and transparency. There`s a rusticity here that`s part of the charm. Serve slightly chilled for maximum enjoyment. Best served cool (12-14°C) to highlight the freshness. Pairs beautifully with charcuterie, grilled vegetables, mushroom dishes, or light fish. This is about discovery and history, not power or concentration.
