This is classic, zesty Chablis, fruit-driven but with a steely edge.
On the palate, this wine is full of citrus fruits, with well-balanced acidity and refreshing mineral notes. It has a lively nose, smooth texture and beautifully elegant finish, making it an excellent pairing for any seafood dish, or a traditional dejeuner of hard goat’s cheese and paté.
About twenty villages around the town of Chablis can produce this world renowned wine, appreciated for its minerality. It is the unique soil of Chablis that gives this particularity to the Chardonnay grape. The bedrock contains deposits of tiny fossilised oyster shells which remind us that Burgundy once lay beneath a warm ocean.
After mechanical harvest, pressing and a short cold maceration period, the fermentation takes place in temperature controlled vats. Malolactic fermentation and lees stirring give the wine finesse and texture.
