Ayala is one of Champagne's historic houses, founded in 1860 and known for their fresh, elegant style with emphasis on Chardonnay. This Blanc de Blancs is 100% Chardonnay sourced from Grand Cru and Premier Cru vineyards in the Côte des Blancs. The 2014 vintage in Champagne produced wines with ripeness and structure, and a decade of aging has brought beautiful complexity and integration.
Brioche, citrus and hazelnut with honey, white flowers and chalky minerality. Medium to full bodied with fine, elegant mousse and vibrant acidity. The fruit has developed beyond primary freshness into more complex territory with toasted almond, candied lemon and subtle oxidative notes. There's richness balanced by tension and precision. Long, mineral-driven finish.
Serve cool (8-10°C) to appreciate the development. Pairs beautifully with grilled Dover sole, sea bass with beurre blanc, aged Beaufort, or works as a sophisticated aperitif. Drinking superbly now, will continue to develop over another 5-7 years.
