Tasting Notes

Slurp Wines NR

Pale pink in colour with steely reflections. Medium aromatic intensity that combines floral scents such as roses and violets with aromas of tropical fruits like lychees and apricots. Some sweeter notes like cherry candy or fresher ones like grapefruit peel. On the palate, we find excellent and balanced acidity that contrasts with the slightly sweet flavours. Bubbles that accompany but do not dominate, and a creaminess that makes it a very `wine-like` sparkler.` Matilde Rinaldis ’Sommelier [Slurp Wines, 05/06/2026]

Carefully selected grapes from Languedoc and Southwest France, where the best conditions for the optimal cultivation of Cinsault, the predominant grape in this blend, converge. The first fermentation is carried out at a low temperature to enhance its intense aroma. The final blend is decided by the winemakers after numerous tastings, and the second fermentation is done in isobaric tanks at a controlled temperature of 16ºC. Once the second fermentation is complete, the wine is cooled to 1ºC for optimal preservation and remains in contact with its fine lees until the moment of bottling.

Food pairings

For appetizers, we recommend it with water melon gazpacho with ham shavings, tuna and avocado tartare, or a fresh salad of tomatoes, burrata, and pomegranate.

For main dishes: Grilled spring vegetables with romesco sauce. Fresh pasta stuffed with egg plant and goat cheese. Peppers stuffed with cod and au gratin. Grilled red shrimp with a touch of salt.

For cheeses and desserts: The classic strawberries with cream or a coconut foam with fresh mango cubes or a cherry tart.
