William Fevre Chablis 2017
This takes Chablis to the next level - crisp, fresh, mineral and with a racy acidity just born to partner oysters!
Fleshy and elegant bouquet revealing citrus, white fruits and floral aromas. The mouth is fresh, supple and underscored by mineral freshness.
Serve with fish dishes, grilled or in a light sauce; many types of seafood, but especially oysters and sushi. William Fevre themselves suggest the perfect pairing is Salmon Tartare.
Combining lovely fruitiness with an attractive freshness and characteristic minerality, Chablis is a wine region with global renown. The highly reputed Domaine William Fèvre’s vineyards sit on Kimmeridgian subsoil and enjoy ideal exposures for the production of a very fine wine.
The cellar uses gravity to avoid pumping the wine during production from one vessel to another, which could
harm the quality of the wine. Brief pneumatic pressing is used to obtain a gentle separation of the solid and liquid parts of the grape. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally. The must is run into small stainless steel vats where it matures for 8 to 10 months prior to release.
