Bright straw yellow in colour. A delicate array of aromas on the nose with hints of almonds and autolysis for added complexity. On the palate are flavours of apple, sea salt and toasty yeast. The barrel fermentation adds extra body and structure. The finish is long and persistent.

Valdespino is one of the few family owned bodegas in Jerez, and is steeped in history. Alfonso Valdespino was one of 24 knights who fought for the city of Jerez in 1264 and was awarded the land in the Jerez region. Today Valdespino is owned by the Estevez family, with 750 hectares of vineyards. Their Pago Macharnudo vineyard provides the Palomino grapes for their single vineyard wines, which includes this Fino 'Inocente'. Valdespino is one of the few bodegas currently producing these exquisite single vineyard sherries.
