Hamilton is one of the original Australian winemaking families. In 1837 Richard Hamilton founded the Hamilton Vineyards, just south of Adelaide. Five winemaking generations later, in 1972, Richard's great-great-grandson Dr Richard Hamilton established a small winery in McLaren Vale under the guidance of his father Burton, a noted viticulturist, and uncle, renowned vigneron, Sydney Hamilton.
The Centurion Shiraz is made using grapes picked from 124 year old vines planted originally in 1892. The grapes are rigorously hand sorted to ensure only the very best fruit is used to make this wine. Following gentle pressing, free run and pressings were matured separately in French oak, with two workings to soften and mature the wine. From these components the final blend was assembled. A major emphasis is in the promotion of long silky tannins on the palate and a lively fruit that will mature elegantly over a long period. This wine was bottled in August 2016 and left in the winery's cellar to gently age in bottle until ready for release.
"124yo vines, part fermented in a new large French oak vat, the balance in small static fermenters with 4 pumpovers daily and 600kg open fermenters with whole bunches/whole berries and hand-plunged, the free-run and pressings matured separately in new and used French hogsheads. The extremely complex processes, plus new (22%) and used oak have given rise to a very attractive full-bodied wine. This is a great wine, with its storehouse of black fruits, round but plentiful tannins and high quality oak all perfectly balanced against each other."
As full flavoured as they come, this Shiraz from 124 year old vines has a remarkable nose of intensly packed dark fruits, eucalyptus and cedar, vanilla and mocha characters from its aging for 2-3 years in French oak hogshead barrels. An undeniably full-bodied palate with great length, tempered with fine, long tannins which bring finesse, elegance and style. A wonderful McLaren Vale Shiraz which will age for well over 10 years. Pair with bold meat dishes and protein rich cheeses.
