Pegasus Bay Pinot Noir 2013/14

A deep carmine colour with a bouquet of flavours evoking black cherries, purple plums, blackberries and raspberries. Beneath these is a savoury underlay of black olives, liquorice, grilled mushrooms and proscuitto. There is a dense core of ripe fruit which is coated with fine-grained, velvety tannins. It is robust, but refined and savoury/spicy overtones linger in the after-taste. Although it is ready to drink on release, with careful cellaring it will become more complex and multifaceted over the next 6-8 years and live well beyond. This is a most versatile Pinot and can easily pair well with chicken, beef, ham, fish and even creamy sauces. "Animated and vibrant, with oodles of floral nuance backed by firm tannins. This gives it suave structure and poise, showcasing layers upon layers of intensity which unfold harmoniously. Extremely evocative of pinot. A captivating rounded and silky style; the palate is broad, savoury and awash with black fruit, with beguiling rose petal and ginger spice notes. The bright acidity and subtle oak give a charming balance to this wine, making it long and satisfying. Plump, voluptuous and generous on the nose with mounds of crunchy red fruit. Their aim is to grow grapes of the highest quality, which fully express the features of the vineyard, and to handle these with the utmost respect. Minimal intervention at all stages from vine to bottle typifies their approach. They believe in traditional sustainable viticultural management, low crop levels, minimal handling of fruit during processing and gentle pressing. This is an excellent vintage pinot noir with modest crop levels of beautifully ripened fruit, which has given the wine excellent depth and concentration. It was made entirely naturally using traditional Burgundian methods, without the addition of any micro-organisms. It was matured in French oak barriques for 18 months prior to blending and bottling.
