The Garage Wine Company makes wines from a series of individual parcels, small lots / bottlings of 8 -22 barrels that include a series of dry-farmed field-blends of Carignan, Garnacha, Monastrell, País, Cinsault and Cab Franc grown on pre-phylloxera rootstock with small farmers in the Maule and Itata. GWCo prides it self on using ancestral farming by hand and horse, traditional methods of the Secano Interior. This wine is naturally fermented with native yeasts, part barrel-aged and part tank-aged over one winter (neutral barrels). They give each Single Ferment a name and as this was a red wine made white for the first time after the bushfires in 2017, they called it the Phoenix ferment for its having been born out of the ashes.
Sustainability has been a key point for GWCo right from the start, sometimes through the necessity of their small scale - silk-screen printed bottles rather than paper labels, food-safe wax capsules from crayon wax rather than mass-produced ones, upcycled steel used to make small lagar style fermentation vessels.
