Franschhoek Cellars Last Elephant 2019
A stunning red wine blended from the best batches the estate produces every year.
The nose is evocative, showing blackcurrants, red cherries, cedar wood, lead pencil and cigar box aromas. These develop in the glass and are joined by raspberry, black cherry, spice and a hint of gaminess. On the palate, the wine is powerful but elegant, with fine tannins that continue to soften in the glass.
This wine is a tribute to the last elephant that was seen departing the Franschhoek Valley in the late 19th century. It is a Bordeaux-style blend, crafted from the best batches the winery can produce every year.
Merlot 52%, Cabernet Sauvignon 29%, Cabernet Franc 10%, Malbec 9%.
The grapes were hand-picked, fermented in closed tanks at temperatues between 25°C and 28°C and then allowed to macerate for 35 days to gain richness, depth and texture. The wine is then given a lavish maturation in 100% new French oak barrels for 14 months, prior to a further 12 months in bottle, all the while gaining and some softness.
Decant to enjoy now or enjoy over the next ten years.
