This Antique Amontillado has a greenish amber tint, typical of aged amontillados of a rich golden colour. There is a real tang to both nose and palate with orange peel, eucalyptus, varnished wood and fennel. There finish is long and dry, with a lingering aftertaste. This sherry is ideal with consomme, hard cheeses or tapas dishes, as well as certain oriental fusion dishes. "Lovely rich and indulgent fruit cake aromas with a bit of vanilla. Full, long, charming. One of the most exceptional of the small independent sherry houses, Fernando de Castilla was revitalised in 1999 by Jan Pettersen, a Norwegian gone native with a passion for top quality sherry. In just a decade since then, Fernando de Castillo has earned a very high profile, and established itself as one of the outstanding producers in Jerez, consistently producing excellent sherry and winning a string of awards including a Decanter International Trophy in 2009 for its Amontillado, and in 2010 for its Antique Pala Cortado.
