Causes & Cures Semi Dry Yarra Valley White Vermouth
With trendsetters declaring a Vermouth renaissance try this beautifully balanced example, citrus spiked and bitter but with orange-toffee depth.
The base wine in this vermouth is biodynamic viognier. Part of the base wine is distilled and infused with botanicals such as wormwood, juniper, bay leaf, Seville orange, meyer lemon, native lime and star anise. Complex orange and herb aromas star and finish on the palate , but the balance is the star here - it's not too bitter, not too sweet.
Vermouth—as a commercial product—originated around Turin, Italy in the 18th century. Shortly thereafter, lighter, drier styles emerged from Chambéry and Marseilles, France in colourless or straw-coloured form.
The word “vermouth” is derived from the German word for “wormwood”, which still remains one of vermouth’s primary infused botanicals.
Causes and Cures is small batch Vermouth made in the Yarra Valley by winemakers with an interest in spirits.
