Bouchon White Pais Salvaje 2018
A delicious and interesting naturally made wine from 100% white Pais grapes
The Bouchon story began in 1892 when Emile Bouchon settled in the Colchagua Valley in Chile from his native Saint Emilion in Bordeaux. Today, the vineyards are located in the Maule Valley and Julio Bouchon Senior and his children continue this long tradition of winemaking. The Pais vines grow naturally in a forest, harvesting is done by hand and requires the use of ladders (upto 5 meters long) to reach the grapes. This is wild fermented with minimum temperature control. The wine is kept in clay amphora, which develops flavour and complexity. This wine is neither filtrated nor clarified, and is suitable for vegans.
In the glass this white 100% Pais wine presents a beautiful golden copper colour, pear and green apple flavours dominate the palate with zesty white pepper and a long complex finish.
