Bouchon Pais Salvaje 2017
A great example of Pais, a grape variety which thrives in Chile and has similar characteristics to Beaujolais wines
The Bouchon story began in 1892 when Emile Bouchon settled in the Colchagua Valley in Chile from his native Saint Emilion in Bordeaux. Today, the vineyards are located in the Maule Valley and Julio Bouchon Senior and his children continue this long tradition of winemaking. The Pais vines grow naturally in a forest, harvesting is done by hand and requires the use of ladders (upto 5 meters long) to reach the grapes. 50% undergoes carbonic maceration, fermentation takes place in concrete tanks using only natural yeasts and it is unfiltered.
Ripe fresh strawberry and cherry flavours with spice and banana characters, balancing tannins and bright acidity.
