Vernaccia di San Gimignano was Italy’s first white DOCG, granted this lofty status in 1993. The area of production is confined to the municipality of San Gimignano. The terrain which is mainly sandy of pliocenic origin retains a good water reserve even in the summer months. The gradient of the hills and the favorable exposition make the area particularly suitable for the San Gimignano which for the past few years have been subjected to a selection process. The vinification process of white wines foresees a cold maceration of the skins which favours the maximum extraction of the primary aromas. At the soft pressing stage the fermentation temperature is controlled. Vernaccia is characterised by a light straw colour which tends to become golden with ageing. Its fine persistent aroma has a fresh and harmonious balance with a light aftertaste reminiscent of bitter almonds. It is well structured with well balanced body and acidity. The fullness and complexity of flavours make the wine and ideal partner to fish, poultry and white meats. It is also an ideal aperitif wine, which should be served at 12-14°C.
