In December 2004, Société Jacques Bollinger acquired the house of Ayala and since then has invested heavily to further enhance the style and quality of their wines. Under the careful management of Hervé Augustin, Ayala continues to go from strength to strength. One of the original twenty six Grande Marque Champagne Houses, Ayala’s noble history dates back to 1860, when Edmond de Ayala received the magnificent Château as the dowry for his wedding. A further stroke of good fortune in that Edmond’s brother was based in London, allowed good quality distribution of the brand in Britain from its inception and by 1908 Ayala had received the Royal Warrant from King Edward VII. Today, the dynamic Ayala range is pioneering the low and zero dosage philosophy, with wines of elegance and great sophistication. Rosé Champagne is a difficult wine to make, but sharing and enjoying it is always a magical moment . Rosé Majeur displays a lovely, light cherry core with a delicate copper glint, enhanced by a beautiful necklace of fine and long-lasting bubbles. On the nose, the wine reveals a seductive bouquet of red fruits, such as strawberries, raspberries and a hint of cassis that is enhanced by the freshness and the finesse delivered by the high proportion of Chardonnay. On the palate, Rosé Majeur is vinous and fleshy, with a very nice balance between the relative strength of the tannins and the delicacy of Chardonnay, leading to a very generous finish. Rosé Majeur is perfect served as an aperitif or with appetizers, but it will also be superb with salmon to balance the fat, with roasted lamb, or with a dessert of red fruits.
