Dessert styles of wine are made all over the world from the very sweet juice of grapes that have been naturally concentrated. There are a number of ways that grapes can achieve this concentration; the choice depends on the climate of the vineyard. The flavours of Viognier have a wonderful synergy with the flavours of Botrytis-infected wines, and Wrattonbully seems to be a perfect region for the production of them. Fruit ripens naturally with high sugar and flavours in the warm summer, and then awaits the dewy mornings and sunny days of autumn to initiate and sustain the growth of the Botrytis cinerea fungus. Yalumba Hand Picked Botrytis Viognier is pale to mid straw in
colour, with a nose typical of a botrytis wine, with lifted apricots and orange peel and a complex funk of Viognier and leatherwood honey. The wine’s natural acidity is balanced with the sweetness from Botrytis concentration leading to a nutty almond kernel finish. This wine is both vegan and vegetarian friendly. Cellar and drink now and for five years.
