Jerome Billard is the fifth generation to run this excellent estate. In the vineyard he ploughs rather than use weedkillers and does not use any synthetic chemical sprays. They have holdings in a number of the Cote de Beaune appellations, including 7 hectares in the Hautes Cotes de Beaune, which are the limestone slopes to the west of the Cote de Beaune. With sensible yields and careful winemaking they can be a good hunting ground for great value Burgundy. In the cellar Jerome retains the traditional open vats for fermenting his Pinot Noir, this is to enable the winmaker to clamber in and punch down the cap of grape skins by foot. He has tried other modern methods but insists this is the best way to extract the right amount of colour and flavour. It shows in the wine which is full of lovely ripe red berry fruit.
