Jerome Billard is the fifth generation to run this excellent estate. In the vineyard he ploughs rather than use weedkillers and does not use any synthetic chemical sprays. They have holdings in a number of the Cote de Beaune appellations, including one hectare of Saint Aubin Premier Cru. This is located on the slopes to the west of the famous Montrachet vineyard and provides some amazing value whites. Full yet still elegant, with toasty notes, this is serious white Burgundy.
