Bourgogne Hautes Cotes de Beaune 2006
Jerome Billard is the fifth generation to run this excellent estate. In the vineyard he ploughs rather than use weedkillers and does not use any synthetic chemical sprays. They have holdings in a number of the Cote de Beaune appellations, including 7 hectares in the Hautes Cotes de Beaune, which are the limestone slopes to the west of the Cote de Beaune. With sensible yields and careful winemaking they can be a good hunting ground for great value Burgundy. Like all great white Burgundy this has been fermented in oak barrel, producing lovely elegant Chardonnay with just the right weight of ripe fruit.
