Consumed in huge quantities in Italy and its native Hungary, Unicum is an 'amaro' distilled from more than forty herbs and spices according to a secret recipe which has been in the Zwack family for over 200 years. It is produced by Peter Zwack and his family in a distillery in Budapest, which has stood on the banks of the river Danube for more than 150 years. The story goes that Dr Joseph Zwack, royal physician to the Austro-Hungarian Empire, served it to the Hapsburg Emperor in 1790 who declared it unique, or `Unicum`. Under the communist government, the Unicum distillery moved to Italy and did not return to Hungary until 1989. Traditionally drunk at room temperature as an after-dinner digestivo, many 'amari' are overly sweet, but Unicum is one of the driest and most characteristic.
