Bodegas Valdivia is the first new bodega to be created in Jerez for a generation. A £20 million investment has resulted in wines and packaging that are like a breath of fresh air in Jerez. The Valdivia range comprises a range of Sherry wines of different styles, each authentic in style and true to its class. They are high quality wines whose length of time spent maturing are, in most cases, above average. If any wines can turn a new generation onto Sherry, then it is these. The grapes used for Bodegas Valdivia wines are grown between the towns of Sanlucar de Barrameda, El Puerto de Santa Maria and Jerez. The Palamino Fino grapes are grown in the ‘Pago de la Plata’ vineyard which is 250 hectares with Albariza soil. Albariza soil comes from ancient marine deposits from the Oligocene era. It is the best soil for producing grapes for sherry. The soil is white, porous and chalky retaining water during the hot summers. The proximity of the vineyards to the sea gives the Fino Valdivia special characteristics through the type of yeast responsible for the biological activity accompanying the aging of this wine. Harvest is always done by hand at the end of August or the beginning of September when the grapes have reached their optimum level of maturity. This sherry is very pale yellow colour with slight hints of greenish tones. On the nose there is a pungent yet delicate aroma of almonds with marked notes of its aging under the flor. On the palate it is very dry, elegant and light with reminisces of the sea.
